What do you suggest wine with this menu, please?

Since I am a good champagne, a bottle of ruby port wine vintage Taylor, I need a bottle to go with each course - no matter the cost for beginners: salmon mousse wrapped in smoked salmon topped with shrimp, served with Melba toast and a salad with grilled steak main meat course, sauteed mushrooms and beer battered onion rings, fries cut hand, grilled tomatoes, peas and salad pancakes warm black cherry, cream cheese served with homemade vanilla ice cream biscuits Irish coffee and small Ovens Port and Cognac

A good champagne go well with his starter. A barrel Chardonnay work well. Main course will be red with a skeleton as a Cabernet Sauvignon or Syrah well developed. You can also use a good Cabernet, Merlot. Serve cheese and crackers here as a cleansing of the platform. You can use the port for the pancakes, if you sprinkle a little chocolate on top was even better with the port. Irish coffee with petits fours and continue with port and cognac.
